When you make these cookies, your kitchen will smell like a lime orchard, they are so good and chewy, I found this recipe over at My Happy Place , I tweaked the recipe a bit to make it a little more healthy. They came out better than I expected.
Ingredients
2 3/4 cups whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
1 cup light brown sugar
1 egg
1/2 tsp vanilla
zest of one large lime
3 tbsp fresh lime juice
1/2 cup unsweetened toasted coconut
Set oven to 350ºF. Line cookie sheets with
parchment paper.
In a small bowl, sift dry ingredients.
Beat butter and light brown sugar until fluffy.
Beat in egg, vanilla, and lime juice and
zest.
Gradually blend in the dry ingredients and
toasted coconut.
Roll rounded spoonfuls of dough into balls and place on cookie sheet.
Bake 8-10 minutes, transfer to wire rack.
