Just in time for Valentine's Day, these came out so red and fluffy. This is my basic cupcake recipe where I just added red velvet flavor and cocoa mix, the kids just loved them, you can pop these in your mouth in one bite.
I found these cute Valentine's mini cupcakes holders at Michael's stores for $1.00 for 100, and this big container of 5 different kinds of Sprinkles for $3.00.
Ingredients
2 1/2 cups of whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tbsp baking cocoa
1 cup light brown sugar
2 tsp vanilla
1 cup buttermilk Homemade
2 eggs
1 tsp white vinegar
1 oz of red velvet flavoring or red food coloring
1 1/2 cup canola/vegetable oil or applesauce
Set oven to 350
Mix wet ingredients, and then add sifted dry ingredients until well blended, then add your red velvet flavoring or red food coloring and mix until well blended.
Fill cups 1/2 way and bake for 12 minutes.
Basic Vanilla Cream Cheese Icing
1 cup of unsalted butter (softened)
1 cup of cream cheese (softened)
2 tbsp of vanilla
3 cups of powdered sugar
1 cup of cream cheese (softened)
2 tbsp of vanilla
3 cups of powdered sugar
